Masahiro professional Japanese knives are made in Seki, Japan from MBS-26 high quality carbon stainless steel (hardness of 58-60 HRC) which is similar to VG-10. Masahiro knives feature an asymmetrical edge, meaning the knife is sharpened more on one side than the other. This makes the edge 35% thinner and it is sharper than a traditional equally sharpened edge and most other Japanese knife brands. Each knife is finished with an anti-bacterial black POM sythetic handle with a full tang which is riveted for extra strength.
